SAMURAI STEAK 
1 1/2 lb. well marbled top sirloin steak, cut in 1/8" slices
3 tbsp. vegetable oil
1 bunch mustard greens (or spinach) cut into pieces
5 green onions & tops, thinly sliced
1/2 c. fresh mushrooms, sliced
2 c. bean sprouts
1/4 c. soy sauce
1/4 c. wine (or wine vinegar)
2 tbsp. sugar or honey
2 tomatoes, chopped

Preheat skillet (or wok) with 2 tablespoons oil, until drop of water sizzles. Add onions and toss until golden color. Add greens, tomatoes, mushrooms, sprouts; saute until crisp-done. Add soy sauce, wine and sugar. Toss 2 minutes. Remove mixture from skillet and reserve. Add 1 tablespoon oil. When hot, add steak. Toss 1-2 minutes. Add vegetable mixture and toss until all is hot. Serve over cooked white rice. Serves 4.
