ANGEL FOOD CAKE 
1 1/8 c. sifted Swan's Down cake flour (1 c. + 2tbsp.)
3/4 c. white sugar

Sift together 3 times.

1 1/2 c. egg whites (about 1 dozen)
1/2 tsp. salt

Beat egg whites and salt on No. 8 speed until foamy. Add 1 1/2 teaspoons cream of tartar and continue to beat until eggs are stiff and stand in peaks. Then turn to No. 7 speed and sprinkle in slowly 3/4 cup white sugar. Then turn to No. 1 speed and add:

1 tsp. vanilla
1 tsp. almond extract

Then sprinkle in slowly the flour and sugar mixture and mix only enough to blend. Pour into ungreased angel food cake pan. Bake 30 to 35 minutes at 375 degrees.
