BURNT ORANGE CAKE 
1 small orange
Water
2 1/2 packets artificial sweetener
1 tsp. cinnamon
1/2 tsp. orange extract
1/2 tsp. lemon juice
2 slices whole wheat bread, slightly stale
2 eggs
1/3 c. skim milk powder
Vegetable cooking spray

Preheat oven to 350°F.

Cut orange in half. Peel one half. Slice rind into small pieces and place in blender to grate. Add the orange pulp and blend for 30 seconds.

Place contents of blender in a saucepan with a little water. Add extract, sweetener, cinnamon, lemon juice and the juice from the unused half of orange. Cover and simmer over low flame for 8-10 minutes.

Place bread in blender at high speed to make crumbs. Add egg yolks to orange mixture in pan, stirring constantly. Simmer for 5 minutes. To cooled contents in pan add milk and bread crumbs.

Beat egg whites until soft peaks form. Fold into mixture in pan. Pour all contents into vegetable sprayed cake pan.

Bake for 25 minutes.
