HAM AND CHEESE SOUFFLE 
16 slices white bread
8 oz. sharp cheese, grated
3 1/2 c. milk
1 tsp. salt
1/2 c. butter, melted
1 sm. can green chili; optional
2 c. cooked ham, cubed
7 eggs
1/2 tsp. dry mustard
2 c. corn flakes, crushed

Remove crust from bread and lightly butter. Place 8 slices of bread in bottom of buttered 3 quart rectangular casserole. Sprinkle with ham and cheese. Top with remaining 8 slices of bread.

Beat eggs, milk, mustard, and salt together. Pour over bread. Cover with foil and refrigerate overnight. When ready to bake sprinkle with corn flakes and pour melted butter over top.

Bake at 350 degrees. Test center for doneness. Baking time - 1 to 1 1/4 hours. Serves 8-10.
