WHOOPIE PIES 
COOKIE:

1 c. shortening (Crisco)
2 c. sugar
4 eggs
1 1/4 c. sour cream
2 tsp. vanilla
4 c. flour
1 c. cocoa
2 tsp. salt
3/4 c. boiling water
2 tsp. baking soda

FILLING:

2 egg whites
2 tsp. flour
2 tsp. milk
2 c. powdered sugar
1/2 tsp. vanilla
1 1/2 c. Crisco
Another 2 c. powdered sugar

FOR COOKIE: Cream shortening and sugar. Add rest of cookie ingredients and mix well. Drop by teaspoon onto cookie sheet. Bake at 350 degrees for 7 to 9 minutes. Top of cookie should spring back when done.

FOR FILLING: Beat whites, flour, milk, 2 cups powdered sugar and vanilla. Add Crisco and another 2 cups powdered sugar. Yields: 60 pies.

Make a "sandwich" out of 2 cookies and filling to enjoy your Whoopie Pies!
