BAKED BANANA SQUARES 
CRUST:

1/4 c. graham cracker crumbs
1/4 c. granulated sugar
1/4 c. butter, melted

TOPPING:

1/4 c. butter
1 tsp. grated dried lemon peel
1 tbsp. lemon juice
4 firm bananas, cut into 1/2 inch slices
1/4 c. firmly packed brown sugar

Preheat oven to 375 degrees. For crust, combine all ingredients in a medium bowl, mixing well. Press into the bottom of a greased 8-inch square pan. Bake 5-6 minutes or until golden brown.

For topping, melt butter in a medium saucepan over low heat. Add lemon peel, lemon juice, and bananas and stir, until bananas are coated with butter. Arrange banana slices on crust. Sprinkle brown sugar over bananas and bake 12-15 minutes or until bubbly. Cut into 2-inch squares. Serve warm. Yield: about 16 squares.
