CINNAMON RAISIN FRENCH TOAST 
3 lg. eggs
3/4 c. milk
1/2 tsp. grated orange peel
1/4 tsp. vanilla extract
Pinch of salt
8 slices day-old cinnamon-raisin bread
2 tbsp. butter, divided
Confectioners' sugar
Maple syrup (optional)

Whisk eggs, milk, orange peel, vanilla and salt together in bowl. Arrange bread slices in one layer in shallow dish; pour egg mixture over bread. Let stand 5 minutes.

Melt 1 tablespoon butter in large skillet over medium heat. Cook half the bread until browned, about 2 minutes per side. Transfer to warm serving platter. Repeat with remaining butter and bread. Sift confectioners' sugar over top of French toast slices and serve with maple syrup. Makes 4 servings.
