FRESH APPLE CAKE 
4 c. Red Delicious apples (4 large apples equals 4 c.)
2 c. sugar
1 c. oil or melted butter
1 tsp. vanilla
2 well beaten eggs
3 c. flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. baking soda (level spoons)
1 c. chopped pecans

Chop apples fine. Add sugar; mix and set aside. Mix oil or butter, vanilla and eggs. Add to apple mixture. Sift together flour, cinnamon, nutmeg, salt and soda. Add pecans. Mix and add to apple mixture. Pour into Bundt or tube pan sprayed with Pam.

Bake at 350°F for 1 hour and 15 minutes.

NOTE: If your pan is a dark coated pan, reduce heat to 325°F and bake for 1 hour and 15 minutes.
