SWEET & SOUR MEATBALLS | |
MEATBALLS: 2 lb. ground pork 2/3 undiluted evaporated milk 1/2 c. finely chopped onion 2/3 c. cracker crumbs 1/2 tsp. garlic powder Form into small balls. Bake 15 minutes at 350 degrees on broiler pan to drain grease. SAUCE: 1 (20 oz.) can pineapple chunks, drained, reserving liquid Combine pineapple juice with enough water to make 2 cups. Mix with 4 tablespoons cornstarch, 1/2 cup vinegar, 1/2 cup brown sugar and 4 tablespoons soy sauce in pan. Cook until thickened and clear. Add pineapple chunks, 1 green pepper cut in bite-size chunks and 1 white sweet onion, cut in bite-size pieces. Cook only long enough to heat through, do not overcook vegetables. They need to be crisp and will cook slightly as they sit in warming container. Place meatballs in electric skillet or crock pot. Pour vegetable chunks and sauce over meatballs. Keep warm on low heat for serving. |
