RICH YEAST ROLLS 
2 pkg. dry yeast or cakes
1/3 c. melted butter, unsalted
1/2 c. warm water
4-5 c. plain flour
3 eggs
3 tbsp. sugar
1/3 c. shortening
1 tsp. salt

In measuring cup dissolve yeast in warm water. Combine eggs, butter and shortening. Add yeast mixture, mixing well. In a large bowl (not plastic). Stir together 1 1/2 to 2 cups of flour, sugar and salt. Add yeast mixture. Beat well. Then stir in enough of the remaining flour to make a soft dough.

On floured surface, knead 3-5 minutes or until dough becomes smooth and elastic. Place in well oiled bowl. Cover and let rise for 1 hour or until it doubles in size. Makes 4 small dinner rolls and let the dough rise for another hour. Bake at 375 degrees and serve hot.
