RICH ROLL COOKIES 
COOKIES:

1 c. butter
2/3 c. sugar
1 egg
2 1/2 c. sifted flour
1/2 tsp. salt
1 tsp. vanilla

Cream butter and sugar. Beat in egg. Combine and add flour, salt and vanilla. Chill dough 3 to 4 hours. Preheat oven to 350 degrees. Roll out very thin and cut. Bake for 10-12 minutes or until slightly colored. Frost with Browned Butter Icing and sprinkle with ball style decorations. (The secret to the best flavor is rolling these thin enough so they come out crisp).

BROWNED BUTTER ICING:

1/4 c. butter
2 1/4 c. powdered sugar
2 tbsp. cream
2 tsp. vanilla

Melt butter and simmer until light brown (about 4-5 minutes). Remove from heat. Stir in powdered sugar, cream and vanilla until smooth. Frost while icing is still warm and thin. Add more cream or milk to thin out as you frost. Food coloring may be added if desired. Makes about 60 (2 inch) cookies.
