MY MOM'S CUT-OUT COOKIES
These are a yummy addictive cookie! They are requested at all Holidays by my now grown children. They ship well if you layer with tissue paper in-between layers, pack the sides well. ENJOY! I always make a double batch of these to start as the 1st batch disappears quickly!

1 cup (2 sticks) butter (no substitutions!)
1 large egg
1 tsp. vanilla
1 1/2 cups confectioners' sugar
1 tsp. baking soda
1 tsp. cream of tartar
2 1/2 cups all-purpose flour

Cream butter, add egg and vanilla. Add remaining dry ingredients (I use a KitchenAid Mix Master) but a heavy duty hand mixer will do. Cover with plastic wrap and refrigerate until cold.

SUGAR/FLOUR MIX:

1 cup confectioners' sugar
1 cup all-purpose flour

Mix together in a small bowl. This will be used to roll out cookies.

Divide chilled dough and let warm slightly. Work into a ball, flatten and sprinkle a little of the sugar/flour mix on a rolling surface. Sprinkle a little on the dough and rolling pin.

Roll out about 1/8-inch thick and cut into desired shapes using Holiday cookie cutters.

Bake at 350°F for 8 to 10 minutes on cookie sheets lined with parchment paper (prevents over-browning and they don't stick; I also spray lightly with Pam - nice clean up too!)

FROSTING:

4 tbsp. (1/2 stick) butter (no subs!)
1 (1 lb.) box confectioners' sugar
1 tsp. vanilla
milk (enough for desired consistency)

Frost and decorate to match the season. Use a small amount of milk to thin frosting to desired consistency (should be slightly thin but spreadable).

STORAGE:

Let dry. Store in plastic containers. Use wax paper in-between layers.
