GRILLED MARINATED SHRIMP 
2 cloves garlic, minced
1 med. onion, diced
1/2 c. vegetable oil
1/4 c. soy sauce
1/4 c. lemon juice
2 tbsp. chopped crystallized ginger
2 lb. fresh lg. shrimp, peeled & deveined

Combine all ingredients except shrimp in a shallow dish; stir well. Add shrimp, tossing gently to coat. Cover and chill 2-3 hours.

Remove shrimp from marinade, reserving marinade. Thread shrimp onto six 14 inch skewers. Grill over medium-hot coals (can be indoor grill) 3-4 minutes on each side, basting frequently with reserved marinade. Yield 6 servings.
