EASY LASAGNA 
1 pkg. (16 oz.) lasagne noodles, not cooked
1 lb. ricotta cheese
4 eggs
Salt & pepper to taste
3/4 lb. mozzarella cheese, grated
Spaghetti sauce (see my Spaghetti Sauce recipe also in this book)

Grease a 9 x 13 inch pan, then put a thin layer of the sauce in it. Line with uncooked noodles. Mix the ricotta cheese, 4 eggs and salt and pepper in a bowl. Spread 1/2 of the ricotta mixture on noodles. Sprinkle 1/2 of mozzarella on then about 1-1 1/2 cups of spaghetti sauce. Repeat this layering once more, then end with a layer of noodles and cover with sauce - no too much - just to cover top. Put 1 tablespoon water in 2 corners of pan. Cover with foil (shiny side down). Bake at 350 degrees for 1 1/2-2 hours.
