CHICKEN SALAD--ORIENTAL 
1 bunch fresh spinach, washed, drained, and chilled
1/2 lb. chicken breasts, boned and skinned
1/4 lb. fresh mushrooms
Chinese fried noodles
Flowerets of broccoli
2 slices bacon, fried and crumbled

Saute chicken in small amount of olive oil; sprinkle with soy sauce while cooking. Cook bacon, crumble and set aside.

In a large bowl, tear spinach, slice mushrooms, cut or slice hot cooked chicken, broccoli, crumbled bacon, fried noodles to taste.

DRESSING:

1/4 c. olive oil
3 tbsp. rice vinegar
1 tsp. soy sauce
1 tsp. honey
1 tsp. mustard
Dash of hot sauce
