RED HOT PICKLES | |
7 lbs. cucumbers (lg. or med.) 1 c. lime 1 c. vinegar 1 oz. red food coloring 1 tbsp. alum 10 c. sugar 8 oz. red hot candy 8 cinnamon sticks Peel and seed cucumbers. Cut in rings and soak in 1 cup of lime to one gallon water for 24 hours. Wash and cover with ice water for 3 hours and drain. Mix 1 cup vinegar and food coloring with 1 tbsp. alum and enough water to cover and simmer for 2 hours. Pour off liquid and discard. Mix 2 cups vinegar, 2 cups water, 10 cups sugar and red hot cinnamon candy. Bring to a boil and pour over pickles. Let stand 24 hours; drain. Bring same liquid to a boil again and pour over pickles. Pack in jars. Add 1/4 stick cinnamon and seal. |
