GRANNY'S RED HOT PICKLES | |
2 gal. large cucumbers (about 15) 2 c. lime 1 c. cider vinegar 1 tbsp. alum 8 1/2 c. water 1 small bottle red food coloring Syrup: 2 c. cider vinegar 10 c. sugar 10 oz. cinnamon red hots 2 c. water 8 sticks cinnamon Peel cucumbers and cut into rings. Remove seeds and centers. Mix lime in water. Put rings in lime water; let stand 24 hours. Wash in cool water. Pour cool water over rings and soak 3 hours; drain. Add 1 cup vinegar, red food coloring, alum and enough water to cover the rings. Heat and simmer 2 hours; drain. Mix ingredients in syrup and bring this mixture to boil. Pour the syrup over the rings. Leave in container with tight lid overnight. Drain and reheat syrup for 3 mornings. Last morning, heat rings and liquids to boiling. Pack in jars and seal. |
