1 gal. cucumbers Peel and core and cut in narrow strips. Mix 2 cups lime and 8 1/2 cups water. Pour over cucumber strips and soak for 24 hours. (May take more water to cover strips.) Drain and soak in cold water for 3 hours. Prepare the following: 1 bottle red food coloring 1 tbsp. alum Enough water to cover cucumbers Pour over cucumbers and simmer for 2 hours. While mixture is simmering prepare the following syrup: 1 lg. bag red hots candy 2 c. water Cook until red hots candy melt. Add 10 cups sugar and 8 sticks of cinnamon and cook until sugar dissolves. Drain vinegar, food coloring and alum mixture off of cucumbers. Pour sugar syrup over cucumbers and soak rest of day. Next day drain syrup from cucumbers. Reheat syrup and pour over cucumbers and soak rest of day. Next day drain off syrup. Reheat to boiling. While syrup is heating pack cucumbers in jars very tight. Pour boiling syrup over cucumbers and seal. Discard cinnamon sticks. 6 to 8 pints. |
