RED HOT PICKLES | |
2 gallons cucumber strips 2 c. lime 8 1/2 qt. water 1 c. vinegar 1 oz. bottle red food coloring 1 tbsp. alum 2 c. vinegar 2 c. water 1 lg. pkg. red hot candies 10 c. sugar 8 cinnamon sticks Use large cucumbers; peel, spoon out seeds and cut in strips. Mix lime and 8 1/2 quarts water; pour over strips. Soak 24 hours, stirring occasionally. Wash and drain well. Soak in ice water 3 hours. Combine 1 cup vinegar, food coloring, alum and water to cover pickles. Simmer 2 hours. Drain and cover with syrup made of last 5 ingredients. Stir and bring to boil. Pour over pickles and let stand overnight. Heat syrup for 3 mornings and pour over pickles. Can on the third morning. |
