SPINACH TOPPED SPAGHETTI 
1 box frozen spinach, defrosted
1 can whole peeled tomatoes or 3-4 fresh, chopped
1 med. onion, halved and sliced thin
1/2 c. grated Locatelli cheese
1 lb. spaghetti
2 tbsp. oil

Heat oil in large skillet. Fry onions and tomatoes until very soft and liquified. Add spinach and 3/4 of cheese. Cook and stir until well blended and heated. Boil spaghetti, top with sauce and leftover cheese.
