BEV'S GREEN ENCHILADAS | |
4 chicken breasts 1 can green Ortega sauce 1 bunch scallions 1 white onion 2 sm. cans chopped black olives 1 pkg. (12) corn tortillas 1 lb. Monterey Jack cheese, grated Boil and season chicken breast to taste. Bone and shred chicken breasts. Add scallions, chopped and white onion, chopped. Add chopped olives to chicken mixture, season to taste. Lightly fry tortillas in oil; dip into green sauce; add chicken and grated cheese in center of tortilla and roll. Continue until all meat and cheese are gone. Pour remaining sauce over rolled tortillas. Place cheese over sauce. Bake at 350 degrees until cheese melts. |
