PERFECT FRIED CHICKEN 
1/2 c. flour
1 tsp. salt
1/2 tsp. black pepper
Shortening for frying
1 chicken cut up

Combine flour, salt and pepper in a plastic bag. Add cut up chicken to flour mixture and shake. Put shortening about 1/4 inch deep in a large skillet. Cook on medium heat. Add chicken pieces. When brown on one side, turn over and brown the other side about 15-20 minutes. Reduce heat and cover tightly. (If cover isn't tight, add 1 tablespoon water). Cook about 30-40 minutes or until tender. Uncover last 10 minutes.
