MIXED SEAFOOD CASSEROLE 
1 pkg. wild rice, cooked
1/2 c. chopped green pepper
1/2 c. chopped celery
1 med. onion, chopped
1 sm. can water chestnuts, drained & sliced
1 c. mayonnaise
1 c. tomato juice
1/2 lb. cooked shrimp
1/2 lb. scallops
1/2 lb. snow crab
1/4 c. diced almonds
1 c. shredded cheddar cheese
Paprika

Combine first 5 ingredients. Place in buttered 2 quart casserole. Combine mayonnaise and tomato juice. Pour 1/2 of mixture over rice mixture. Arrange shrimp, crab and scallops around edge of casserole and leave center free. Pour remainder of mayonnaise-tomato mixture over seafood. Combine nuts and cheese and arrange in center of casserole. Sprinkle with paprika. Bake at 350 degrees for 30 minutes. 4 servings.
