APPLE PIE CAKE 
1/4 c. butter
1 c. sugar
2 eggs
1 c. flour
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
3 tbsp. orange juice
1 tsp. vanilla
2 1/2 c. chopped apples
1/2 c. raisins

Cream butter; add sugar slowly and beat well. Add eggs and mix well. Combine next 5 ingredients; add to creamed mixture alternately with juice - begin and end with flour mixture. Stir in vanilla.

Fold in apples and raisins. Pour in greased and floured 9-inch pie plate. Bake at 350 degrees for 45 minutes or until toothpick comes out clean. Cut into wedges. Whipped cream is optional.
