ROASTED RED POTATOES 
1 lb. red potatoes
1/2 tsp. salt
2 tbsp. grated Parmesan cheese
1 tbsp. olive oil
1/8 tsp. pepper

Cut potatoes into slices. Toss. Place in baking dish. Sprinkle with salt, pepper and cheese. Cover with foil and bake in 350°F oven until tender, about 40 minutes.
