SAUSAGE COFFEE CAKE 
2 lbs. sausage
1 c. chopped onions
1/2 c. grated parmesan cheese
1/2 c. grated cheddar cheese
2 eggs, beaten
1/2 tsp. hot sauce (Tabasco is best)
1 tsp. salt
4 tbsp. chopped fresh parsley (if using dried, use 2 tbsp.)
4 c. bisquick mix
1 1/2 c. milk
1 1/2 c. mayonnaise
Milk

Brown sausage and onions, drain. Add next 6 ingredients. Combine biscuit mix, milk and mayonnaise. Spread half of the batter in 9x13 pan. Pour on sausage mixture. Cover with remaining batter. Slowly pour additional 2 tbsp. milk over batter and with finger spread it around. (This helps the cake to brown). Bake at 400 degrees for 30 minutes until cake leaves the sides of the pan. Cool 5 minutes before cutting into squares. BE SURE TO GREASE PAN OR SPRAY WITH COOKING SPRAY. Note: This recipe may be reduced by one half and baked in a 9 x 9 x 2 inch greased pan.
