TOMATO QUICHE 
2 tomatoes
9 inch pie shell
2 eggs
1 c. milk
1 c. shredded Swiss or Cheddar cheese
1/2 c. chopped onions (optional)
1 1/4 tsp. salt
1/4 tsp. black pepper

Cut one tomato into small dices. Slice second tomato. In medium bowl lightly beat eggs. Stir in milk, cheese, onions, salt, pepper and diced tomatoes. Pour into pie shell. Bake at 350 degrees for 30 minutes. Top with sliced tomatoes and bake another 25 minutes. Let pie stand at room temperature for 10 minutes before cutting.
