TOMATO QUICHE 
1 pie shell, 9 inch
Oil to saute
2 tomatoes, skinned and sliced
2 tsp. basil
1/2 c. milk
1 onion, sliced
1 1/2 c. grated cheese
2 tbsp. flour
3 eggs, beaten
Salt to taste

Make pie shell by preferred recipe. Bake in preheated oven (400 degrees) for 8 minutes.

Meanmwhile, saute onion in oil unitl soft - not brown. Put 1 cup of cheese in bottom of pie shell. Top with onions. Sprinkle tomato slices with flour and basil and saute 1 minute on each side. Arrange atop onions.

Combine eggs and milk and pour over tomatoes. Salt to taste. Sprinkle remaining 1/2 cup cheese on top. Bake for 10 minutes at 400 degrees, then 15-20 minutes at 350 degrees. Serve warm.
