VIDALIA ONION AND RICE 
3 or 4 Vidalia onions
1 pkg. Country Inn rice (any kind)
1 pkg. Monterey Jack cheese

Chop onions in cubes and saute in butter until golden. Cook rice as package says. In a casserole put onion in bottom, cheese on top of onion, then rice on cheese and top rice with more cheese. Bake at 350 degrees until cheese is melted.
