COCONUT COOKIES 
1 c. shortening
2 c. brown sugar
2 eggs
2 c. coconut
4 tbsp. milk
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla

Preheat oven to 350°F. Cream shortening and sugar; add eggs and mix well. Combine dry ingredients and add to creamed mixture, mixing well. Stir in vanilla. Drop spoonful of dough onto lightly greased cookie sheet.

Bake at 350°F for 10 to 12 minutes. Remove to rack to cool.
