LEMON COCONUT COOKIES 
1 c. butter
1/2 c. sugar
1 egg
1 tbsp. fresh lemon juice
1 tsp. grated lemon rind
2 c. flour
1/2 tsp. salt
1 (3 1/2 oz.) can flaked coconut

Preheat oven to 325 degrees. Cream together butter and sugar. Mix well. Add lemon juice, lemon rind, flour, and salt. Mix well. Add coconut. Drop by teaspoonfuls on greased cookie sheet. Bake in oven for about 15 minutes.
