CHOCOLATE CHIP COCONUT RUM COOKIES | |
1 c. all-purpose flour 1/4 tsp. salt 1/2 tsp. baking soda 6 tbsp. unsalted butter, softened 1/2 c. packed light brown sugar 1/4 c. granulated sugar 1 large egg, lightly beaten 3/4 tsp. vanilla 3/4 tsp. light rum 1/2 c. grated coconut 1/2 c. semi-sweet chocolate chips Preheat oven to 375°F. Sift the flour, salt, and baking soda together in a bowl and set aside. In another bowl, using an electric mixer, beat the butter, brown sugar, and granulated sugar until the mixture is light and fluffy. Add the egg, vanilla, and rum. Beat the mixture well. Fold in the flour mixture, coconut, and chocolate chips. Form the cookies on a baking tray, using a small ice cream scoop. Bake at 375°F for about 8-10 minutes. Yield: 24-30 cookies. Serving Size: 6 |
