FORESTERS JAMBALAYA 
1 lg. hen or 2 lg. fryers
1 lb. smoked sausage
2 lbs. stew meat
2 bell peppers, cut up small
3 med. onions, cut up small
1 whole garlic, cut up small
Salt and pepper to taste
1 stalk celery and leaves, cut up
2 lbs. rice or 4 c.
1 bunch green onions, cut up

Boil hen and remove from bone and save stock of chicken. Cook stew meat until tender. Add sausage and cook until done. Add chicken and stock. Add bell pepper, garlic, celery and green onions, which have been wilted in an iron skillet. Add cooked rice to other ingredients. Cook slowly for about 5 to 10 minutes over very low heat, stirring constantly. This will feed 24 or more easily.
