MARMALADE BEETS 
1 lb. can sliced beets or 2 c. sliced fresh beets
3 tbsp. orange marmalade
1 1/2 tsp. lemon juice
1 tbsp. butter
1/4 tsp. salt
Dash of pepper & ground ginger

Drain beets. Combine marmalade, lemon juice and butter. Heat and stir until marmalade melts. Add seasonings. Blend. Then add beets and cover. Simmer 3 minutes, stirring occasionally.
