HAM-STUFFED POTATOES 
4 lg. potatoes
1 egg
1/2 c. finely chopped cooked ham
1/4 c. milk
Salt and pepper

Wash potatoes and rub with oil. Bake in hot oven (400 degrees) 40 to 60 minutes. Cut slice off top. Scoop out center, leaving thick shell. Mash potato. Separate egg. Beat yolk slightly; add ham, milk, and mashed potato. Season. Beat egg white until stiff and fold into mixture. Refill shells and bake 10 minutes in hot oven (450 degrees). Serves 4.
