AMISH CAKE 
2 c. sugar
2 c. flour
1 tsp. baking soda
2 eggs
1 1/2 c. pecans, chopped (optional)
1 (20 oz.) can unsweetened pineapple with juice

In mixing bowl, mix sugar, flour and soda. Add eggs, pineapple with juice and pecans, if desired. Mix well and pour into a 9 x 13 x 2-inch baking pan and bake at 350°F for 40 to 45 minutes. Spread with icing.

Icing:

1 (8 oz.) pkg. cream cheese
1 stick butter, melted
1 tsp. vanilla
2 c. powdered sugar
small pecan pieces

Mix first four ingredients. Spread on barely warm cake. Sprinkle with small pecan pieces.
