SIMPLE OLD STANDBY RHUBARB CAKE 
1 1/2 c. brown sugar
1/2 c. butter
2 eggs
1 c. buttermilk or sour milk
1 tsp. baking soda
Pinch of salt
2 c. sifted flour
1 1/2 to 2 c. rhubarb, diced small
1/2 c. sugar
1 tsp. cinnamon

Cream shortening (butter) and sugar. Beat in eggs. Add milk and dry ingredients. Mix well. Pour into greased and floured 9x13 pan. Bake 350 degrees 30 minutes or until done.

Top with 1/2 cup of sugar and 1 teaspoon cinnamon mixed. Sprinkle over unbaked batter.
