CRACKER PIE | |
3 egg whites 1 c. sugar 1 tsp. baking powder 1/2 tsp. vanilla 3/4 c. chopped nuts (walnuts or pecans) 1 c. cracker crumbs (Ritz or Waverly) Ice cream Beat egg whites until stiff. Add sugar, baking powder and vanilla. Mix each in well. Fold in nuts. Add cracker crumbs. Mix all carefully and pour into a well greased 8 inch pie plate. Bake 30 minutes at 350 degrees. Let cool in its plate, outside oven. Cut in wedges, top with ice cream. Top will be cracked looking. Tastes sweet, light and slightly chewy! Freezes well too! Serves 6. |
