MEXICAN LASAGNA 
1 lg. ground beef
1/2 c. chopped onion
1 pkg. taco seasoning
15 oz. can chili style beans
8 oz. can tomato sauce
8 oz. cooked lasagna noodles
2 eggs
1/2 c. Parmesan cheese
12 oz. carton cottage cheese
1/2 tsp. salt
1/4 tsp. pepper
2 1/2 c. shredded cheddar cheese

TOPPING:

Chopped tomatoes
Shredded cheese

Combine ground beef and onion. Cook and drain. Blend in seasonings. Mix in beans and tomato sauce. Cook together. Beat eggs. Stir in cottage cheese, Parmesan, salt and pepper. Spread 1/2 noodles in 2 quart dish. Top with half the cottage cheese filling and half meat. Repeat layers. Bake at 350 degrees for 45 minutes. Let stand 10 minutes before serving. Top each portion with lettuce, tomatoes and cheese. Hot dish freezes well.
