1 lb. cream cheese 2 eggs 1 tsp. lemon juice 1 tsp. vanilla 3/4 c. sugar 1 lg. carton sour cream 2 tbsp. sugar 1 tsp. vanilla Cream together well the cream cheese, eggs, lemon juice, 1 teaspoon vanilla and 3/4 cup sugar. Pour into unbaked graham cracker crust (recipe follows). Bake 25 minutes at 350 degrees - slightly less. For topping, cream together remaining ingredients and spoon on top of filling. Bake 5 minutes more. Cool and refrigerate overnight. GRAHAM CRACKER CRUST: 1/2 c. butter 1 1/2 c. graham cracker crumbs 1/2 c. sugar Non - stick spray (Pam) Coat pie pan with non - stick spray. Soften butter in bowl in microwave. Add graham cracker crumbs and sugar. Mix well, pour into pie pan and using large spoon, press to form. |
