RED BEANS AND RICE 
2/3 c. white rice
1 1/3 c. water
1 tbsp. butter
1 (15 oz.) can kidney beans (low sodium), drained and rinsed
1 med. green pepper, chopped
1 clove garlic, minced
Salt (optional)

Combine rice, water and butter in 1 1/2 quart casserole dish. Cover. Microwave on high 5 minutes. Add kidney beans, green pepper and garlic. Cover. Microwave on medium (50%) for 12 minutes or until liquid is absorbed. Let stand 5 minutes. Salt to taste. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
