CINNAMON BARS 
1 c. butter, softened
3/4 c. sugar
2 c. flour
3 tsp. cinnamon
1 egg, separated
1 tsp. vanilla
1 c. chopped pecans

Cream butter and sugar. Combine flour and cinnamon. Gradually add to creamed mixture. Stir in egg yolk and vanilla until well blended. Spread dough in a greased 15 1/2 x 10 1/2 x 1 inch baking sheet and pat down. Brush egg white on top of dough. Sprinkle nuts over dough. Press nuts into dough.

Bake at 300 degrees (preheated) for 30 minutes. Cut into bars and remove from sheet to cool. About 2 dozen bars.
