FRENCH HAMBURGER (BITOQUE) 
1 1/2-2 lbs. ground beef
1/2 c. fresh bread crumbs
1/8 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. flour
3 tbsp. butter
3 tbsp. sour cream
3 tbsp. consomme

Soak bread crumbs in milk. Squeeze to remove excess milk. Combine crumbs, beef, salt and pepper. Mix well. Form into about 6 flat patties. Flour the patties. Heat butter in a large skillet. Add patties and cook for 5 minutes or more on each side until done.

Remove to a warm platter and cover. Add sour cream and consomme to skillet. Stir to form a sauce. Pour the sauce over the meat and serve immediately.
