GROUND BEEF 
1 1/2 lbs. ground beef
1/2 med. onion, diced
1 can diced green chilies
1 sm. can sliced olives
1 (8 oz.) can tomato sauce
1 can Mexican flavored tomatoes
2 1/2 c. instant rice
1/2 c. grated Cheddar cheese

Brown onion and ground beef in skillet; drain. Add drained olives and chilies. Cook together 5 minutes. Add tomatoes and tomato sauce, rice and 2 cups water. Cook on low heat 10-15 minutes. Put in casserole dish and sprinkle cheese on top. Bake until cheese melts.
