VEGETABLE-BEEF CASSEROLE 
1 1/2 lb. ground beef
1/4 c. butter
1/4 c. all purpose flour
2 c. milk
1 tsp. salt
1 tsp. garlic salt
1/4 tsp. pepper
3 lb. potatoes, thinly sliced
2 lg. onions, thinly sliced
1 (10 oz.) pkg. frozen English peas, partly thawed
1/2 c. shredded cheddar cheese (2 oz.)

Brown ground beef in a large skillet, stirring to crumble; drain and set aside. Melt butter in a heavy saucepan over low heat; add flour stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat stirring constantly until mixture is thickened and bubbly. Stir in salt and pepper; set sauce aside.

Layer half of beef, potatoes, onions, peas, and sauce in a lightly greased 2 1/2 quart casserole. Repeat layers ending with sauce. Cover and bake at 375 degrees for 50 minutes. Sprinkle with cheese and bake uncovered for another 5 minutes. Yields 6 servings.
