1 c. sherry
1/4 c. olive oil
2 tbsp. butter
1 med. onion, very finely minced
1 clove garlic, crushed
1 1/2 tsp. salt
1/4 tsp. paprika
1 tsp. Italian seasoning
1 tsp. minced parsley
Freshly ground pepper to taste

Combine all ingredients; simmer 15 minutes.
