FRUIT CAKE MINIATURES 
1 lb. dark fruit cake
1 1/2 c. confectioners' sugar
1 tsp. cocoa
1 tsp. vanilla
6-8 tsp. water
Cashew nuts for garnish

With sharp knife cut 1 pound dark fruit cake into 1 inch cubes. Place a wire rack over wax paper. Put the fruit cake cubes onto the wire rack. In small bowl, mix until smooth and thick, the sugar, cocoa, vanilla and water. Drizzle mixture over each cube, covering top and sides as it falls. Top each cube with a cashew. Store in tightly covered container. Makes 24 pieces or about 1 pound. May be prepared a week ahead.
