CORN BEEF CASSEROLE 
1 (12 oz.) can corn beef
2 c. Cheddar cheese
2 tbsp. minced onion
1 can cream of mushroom soup
1/2 c. milk
1 stick butter
2 c. slightly crushed Ritz crackers

Slice and cut corn beef into squares. Cut Cheddar cheese into squares. Layer corn beef, cheese and onion in 1 quart casserole. Mix soup with milk. Pour over beef and cheese. Mix melted butter with cracker crumbs. Spread on top. Bake at 350 degrees for 30 minutes.
