RED BEANS AND RICE 
1 lb. dried red beans, soaked overnight
2 onions, chopped
3 lg. garlic cloves
1 tsp. salt
1 tsp. black pepper
1/4 tsp. oregano
1/4 tsp. thyme
Dash of red pepper
Seasoned salt to taste
1 lb. smoked sausage
Rice

Cook beans in about 1 1/2 quarts water for about 1 hour. Add onions and seasonings and continue cooking, on low heat, for another 2 hours. Check water level frequently and stir often. Beans are done when they begin falling apart and turn "creamy." Add sausage the last 45 minutes. Serve over rice.

NOTE: This cooks beautifully in a crock pot. Use less water and add everything but the sausage. Set on high for about 4 to 6 hours. Add sausage the last hour.
