RED BEANS AND RICE 
1 lb. dried red beans, soaked overnight
3 c. chopped onion
1 c. bell pepper, chopped
2 lg. pods crushed garlic
1 tsp. salt
1 tsp. red pepper
1 tsp. black pepper
3 dashes Tabasco sauce
1 tbsp. Worcestershire sauce
1 sm. can tomato sauce
1/4 tsp. oregano
1/4 tsp. thyme
1 lb. smoked sausage, cut into bite-size pieces

Cook beans until done. Add vegetables, seasonings, and tomato sauce. Cook slowly for 1 hour, stirring occasionally. Add sausage and cook about 45 minutes more. Serve over steamed rice. Serves at least 8.
